4 medium sweet potatoes (yams)
Salt to taste
Solid vegetable shortening for frying
Peel yams and cut crosswise into very thin slices. Cover with water and refrigerate overnight.
Remove sliced yams from refrigerator and drain and dry on paper towels.
Fry about one third of potatoes at a time in shortening at 365 degrees for 5 to 8 minutes or until golden brown. Drain on paper towels. Sprinkle with salt. (Other salts or cinnamon sugar can be substituted for salt.)
