Fried Onions for 100

Servings: 100 Portions
Portions: 1/4 Cup Each
Temperature: 400 degrees F. Oven

5 cups (2 lb 8 oz) shortening, melted
20 lb. onions, dry, thinly sliced
5 tablespoon (3-1/2 oz) salt
1 teaspoon pepper, black

Heat 2-1/2 cups shortening in each pan. Add 10 lb onions to shortening in each pan. Cook 40 minutes or until tender and lightly browned. Stir occasionally to prevent burning.

Season onions in each pan.

NOTE:
22 lb dry onions A.P. will yield 20 lb thinly sliced onions.

If desired, onions may be cooked on a preheated, greased 350 degrees F. griddle.
