Forget Me Chinese Roast

2-3 LB boneless pork roast (any type)
1/2 cup dry sherry
1/4 cup soy sauce
1 clove garlic, minced
1/2 teaspoon pepper
1/2 teaspoon dry mustard
1/2 teaspoon ginger
1 large white onion, coarsely chopped
green onion for garnish

Serves 6 -8

Soak clay pot according to manufacturer’s instructions. Combine all ingredients (except green onions) in the clay baker and bake in a 300 oven for 4-5 hours. Transfer to a platter – don’t worry if it falls apart. Pour juices over top. Sprinkle with chopped green onions. I serve it with rice.
