Flo’s Carrot Bars

2 large eggs
1 cup granulated sugar
3/4 cup vegetable oil
1 cup baby food carrots
2 teaspoons vanilla extract, divided use
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup nuts, chopped
1/4 cup butter, softened
1 package (8 ounces) cream cheese, softened
1 1/2 cups powdered sugar, sifted

Preheat oven to 375º F (175º C).

In a medium bowl combine eggs, sugar, oil, and baby food carrots. Stir in 1 teaspoon vanilla extract, flour, baking soda, cinnamon, and chopped nuts. Pour into a greased and floured 15″ jelly roll pan. Bake for 15 to 20 minutes. Cool on rack. Frost.

Frosting: In a small bowl beat butter, cream cheese, 1 teaspoon vanilla extract, and powdered sugar until of spreading consistency.

Makes 16 bars.
