Epazote

Epazote, wormseed, Jesuit’s tea, Mexican tea, Paico or Herba Sancti Mariæ (Dysphania ambrosioides, formerly Chenopodium ambrosioides) is an herb native to Central America, South America, and southern Mexico.

An herb that grows wild, it should always be cooked, at least minimally, to release its flavor. The tender inner leaves are preferable. Cook with all types of beans to reduce their gaseous qualities. Very good in stews, soups, green pipi¡ns and moles.
