Seasoned stuffing mix makes short work of this rich meat loaf. Eggs and barbecue sauce keep it moist while it bakes. Serve it with savory mashed potatoes or slice it up for sandwiches.
2 pounds lean ground beef or turkey
1 cup water
1 (6-ounce) package stuffing mix for beef
2 large eggs, beaten
1/2 cup barbecue sauce, divided use
Preheat oven to 375°F (190°C).
In a large bowl mix meat, water, stuffing, eggs and half of barbecue sauce. Shape into an oval loaf in a 13 x 9 x 2-inch baking dish; top with remaining barbecue sauce.
Bake until center is no longer pink, about 1 hour.
