Cucumber and Tomato Salad

1 medium cucumber, halved lengthwise & thinly sliced
salt
25 ml olive oil 2 tbsp
1 small red onion, thinly sliced
1 garlic clove, crushed
1 tomato, peeled, seeded & chopped
15 ml tomato paste 1 tbsp
15 ml red wine vinegar 1 tbsp
pinch dried thyme, crumbled
pinch dried basil, crumbled
salt & pepper to taste

Combine cucumber with enough water to cover in small saucepan. Lightly salt water and bring to a boil; about 2 minutes. Drain cucumber; transfer to paper towels to dry completely.

Heat oil in heavy small skillet over medium-low heat; add onion, garlic and cook until softened, stirring frequently, about 5 minutes. Remove from heat; stir in tomato, tomato paste, vinegar, thyme and basil. Season with salt and pepper. Stir in cucumber. Chill.
