Crispy Curried Chicken

1 chicken about 2 lbs.
Oil for deep frying
1 small head of lettuce
2 tomatoes

Marinade
2 tablespoon sugar
1 tablespoon yogurt
2 tablespoon ginger juice
2 tablespoon fish sauce
1 teaspoon pepper

Wash and cut chicken into bite size pieces. Marinate for 1 hour. Drain chicken thoroughly. Heat oil and deep fry chicken a few pieces at a time. Serve on lettuce leaves and sliced tomatoes. You can fry the chicken whole for better presentation.
