2 large eggs
1/2 cup plus 2 tablespoons granulated sugar
1/2 cup applesauce
1/2 cup sour cream
1 teaspoon grated orange peel
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup dried cranberries
1/4 cup chopped nuts
Preheat oven to 375 deg F. Line muffin pans with paper liners (if using non-stick tins, you can omit the paper liners) Using electric mixer, beat eggs and sugar in large bowl until thick and light about 5 minutes. Add applesauce, sour cream and orange peel, beat until well blended. Mix flour, baking powder, baking soda and salt. Add to egg mixture and mix until just blended (do not over mix). Stir in cranberries and nuts. Fill muffin tins about 1/2 full. Bake about 20 minutes or until a toothpick inserted in center comes out clean.
