3 egg
1 cup milk
4 teaspoons flour
1/2 teaspoon pepper
1/4 teaspoon salt
3 7-3/4 ounce ca diced Ortega chilis
3/4 pound cheddar cheese, shredded
3/4 pound Monterey Jack cheese, shredded

Grease 9×13 baking dish. Beat eggs, milk, flour, pepper and salt. Sprinkle chilis from first can in baking dish, covering the bottom. Sprinkle with 1/3 of each cheese. Repeat layering twice. Pour egg mixture over cheese. Let stand 30 minutes. Bake at 350 for 45 minutes, or til slightly puffed and golden brown at edges. Let stand 20 minutes before serving.
