Chicken Vindaloo

2 teaspoons black mustard seeds
1 teaspoon cumin seeds
1 tablespoon oil
2 cups minced onion
5 cloves minced garlic
1 inch ginger, minced
1-1/2 lb boneless, skinless chicken breasts, cut in 1 inch cubes
1 teaspoon cinnamon powder
1/2 teaspoon clove powder
1 tablespoon turmeric
1/4 teaspoon cayenne
1 tablespoon garam masala
1 tablespoon tamarind concentrate dissolved in hot water
2 teaspoons lemon juice
1 tablespoon white vinegar
1 teaspoon brown sugar
1-2 cups water
2 parboiled potatoes, cubed

Pop the seeds in the oil. Add onion, garlic and ginger and fry until onion is light brown. Add chicken and cook until chicken is brown. Add the spices and fry for a minute or two. Add the rest of the ingredients and simmer for 45 minutes or until desired consistency.
