3 lg Onions; minced
1 TB Lard
1 TB Paprika
2 sm Chickens (1.5-2 lb each); Jointed
2 md Green peppers; diced
Salt
1 tablespoon Flour
1 oz Cream
Yield: 4 servings
Cook onions very slowly in lard 1 hr, stirring occasionally. Add paprika and simmer 10 min. Add chicken pieces and stew 30 min, turning occasionally. Add green peppers and salt. Cook 30 more min, turning occasionally. Add flour and cream. Bring to the boil and remove from heat immediately.
Serve with dumplings or rice (or noodles or potatoes!).
