Chicken Diane

4 boneless, skinless chicken breast halves
Salt and pepper to taste
6 tablespoon diet margarine
1/2 cup fat free sour cream
2 tablespoon dry sherry
1 10 ounce can fat free cream of mushroom soup
Fresh sliced mushrooms

Salt and pepper the chicken. In a skillet, melt the margarine and brown the chicken on all sides. Place the chicken in a baking dish. Mix the sour cream, sherry and soup in the frying pan that you browned the chicken in, mix well.

Pour over the chicken, then sprinkle the mushrooms over the chicken. Cover and bake in the oven at 350F for about 1 hour or until the chicken is cooked through. This is great served with rice or yellow rice.
