Cheesy Corn Fritters

100 g plain flour
1 teaspoon baking powder
salt; to taste
1 egg
150 ml milk
100 g mature cheddar cheese; coarsely grated
4 tablespoons tomato ketchup
225 g sweetcorn; cooked
butter; melted, for frying
bacon; grilled, to serve

Yield: 16 fritters

Sift flour, baking powder and salt into a bowl. Make a well, break in egg and beat with a wooden spoon until smooth, gradually adding milk. Stir cheese into batter with ketchup and sweetcorn. Leave to stand for 20 minutes. Lightly brush a non-stick frying pan with butter. When pan is hot, spoon in 1 tablespoon of the mixture, flattening it with the back of the spoon. Cook for 2-3 minutes on each side until crisp and golden. Repeat with remaining mixture. Serve immediately with grilled bacon.
