2 Cups self rising flour
pinch salt
1/4 Cup Soft Margarine
1/3 Cup Finely Shredded Reduced-fat Sharp
Cheddar cheese
1/2 Cup Dried Pitted Dates, finely chopped
2 eggs
2/3 Cup milk
Sift the flour and salt into a bowl. Rub in the margarine until the mix resembles fine bread crumbs. Add 1/3 cup of the cheese and the dates. Mix well.
Beat the eggs and milk together, add to the date mixture and mix well. Turn the mixture into a lightly greased 1 lb. loaf pan and level the surface. Sprinkle well with the remaining cheese.
Bake in a preheated oven 350 degrees F. for 35-45 minutes.
