Carrot Souffle

500 g carrots, cooked & mashed
125 ml butter
3 eggs, beaten
5 ml vanilla
40 ml flour
5 ml cinnamon
2 ml nutmeg
125 ml sugar
5 ml baking powder

In a large bowl; mix all ingredients with a mixer. Pour into lightly greased baking dish. Bake in preheated 350 F (180 C) oven for 45 to 50 minutes or until inserted knife comes out clean.

This dish can be served hot or cold.
