Calamari Salad

1-1/2 lbs. cleaned squid
1/2 lemon
1 cup diced celery
1/2 cup red onion, sliced
3 tablespoon lemon juice
2 tablespoon drained capers
2 tablespoon chopped parsley
1 tablespoon olive oil
1 clove garlic
1/2 teaspoon oregano
Dash fresh ground pepper
Garnish 2 lemon wedges

Cut cleaned squid into bite size pieces. Place in saucepan. Add lemon half and water to cover. Bring to a boil. Cook until tender, 5 minutes maximum. Drain and refrigerate until chilled.

To serve
Combine remaining ingredients except lemon wedges. Add squid and toss. Garnish with lemon wedges.
