Brindled Eggs

2 extra large eggs
4 tablespoons chopped onion or leek
6 tablespoons shredded mozzarella or cheddar cheese
5 tablespoons Jalapeño Ranch dressing
1/2 teaspoon horseradish
dash garlic powder
dash black pepper
Mung or alfalfa bean sprouts
Shelled pumpkin seeds

In lightly oiled microwave-safe dish, beat together the eggs, onion, Jalapeño dressing, horseradish, cheese, and spices. Microwave at half power, covered, for approx. 5 – 6 minutes, stopping every couple of minutes to stir. When eggs are firm, but not dried out, remove from microwave and top with bean sprouts and pumpkin seeds.
