Brie in Phyllo

1 one pound package frozen phyllo dough, thawed
1 pound butter, melted
1 small whole Brie cheese (approx. 1 b.)

Preheat oven to 350 F. Butter a jelly roll pan. Brush 10-12 sheets of dough with butter, one sheet at a time. Set Brie (rind on) on top of buttered phyllo and fold edges of dough up around the cheese. Cover top of Brie with another buttered 10-12 sheets (save 1 sheet for top knot). Tuck ends of pastry under the cheese. Make into a round package. Brush tops and all sides with more melted butter. Fold the 1 last sheet of buttered dough in a knot. Lay this on top of dough and butter again. Bake for about 30 minutes or until golden brown. Let stand for 20 to 30 minutes before serving. Cut into small wedges to serve.
