Bread Pudding

3 each eggs
1/2 cup granulated sugar
2 teaspoons vanilla
1 pinch salt
2-1/2 cups milk
4 cup small pieces white bread; slightly dry
1 cup raisins
1 teaspoon cinnamon

In bowl, combine eggs, sugar, vanilla and salt; beat until light and fluffy. Add milk; stir to blend well. In greased 8-cup baking dish, place bread, then raisins in alternating layers. Pour egg mixture on too. Sprinkle with cinnamon. Place dish in shallow pan of hot water. Bake in 350 F oven for 45 minutes or until top is slightly crusty and knife inserted in centre comes out clean. Serve warm, with cream or maple syrup if desired.

Yield: about 6 serving
