Bhindi Do Pyaza

Praprbeep Patra, one of the head chefs at Darbar, shares a recipe for an Indian okra dish.

450g okra
2 medium onions, chopped
2 tsp oil
1/4 tsp garlic paste or powder
1/4 tsp coriander paste or powder
1/8 tsp cumin
3 large tomatoes
1/2 cup chopped cilantro

Cut the tip and the bottom off the okra.

Heat oil in a pan over medium heat, add the chopped onions and cook for three minutes. Add everything except the okra, cilantro and tomato. Cook for three minutes. Add okra, and cook for six to eight minutes. Garnish with chopped cilantro and tomato, and serve with rice or naan.
