500 ml boiling water 2 cup
85 g lemon flavored gelatin 3 oz
6 small beets, cooked, peeled & diced
175 ml celery, chopped 3/4 cup
25 ml green onion, chopped 2 tbsp
25 ml prepared horseradish 2 tbsp
Pour boiling water over gelatin in large bowl. Stir until gelatin is dissolved. Stir in remaining ingredients. Pour into 4 cup (1 L) mold. Refrigerate until firm. Unmold and serve on platter.
