Baking Powder Biscuits

2 cups. all-purpose flour
1 tablespoon plus 1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup plus 1 tablespoon shortening
1/4 cup milk

Combine flour, baking powder, and salt; stir well. Cut in shortening until mixture resembles coarse meal. Sprinkle milk evenly over flour mixture, stirring until dry ingredients are moistened. Turn dough out on a lightly floured surface; knead lightly 10 to 12 times. Roll dough to 1/2 inch thickness; cut with a 2-3/4 inch biscuit cutter. Place biscuits on a lightly greased baking sheet. Bake at 450 for 12 minutes or until lightly browned.

Makes 12 biscuits.
