1 kg butternut squash 2 lb
30 ml brown sugar 2 tbsp
5 ml ground cinnamon 1 tsp
1 ml ground nutmeg 1/4 tsp
salt & pepper to taste
Cut squash in half. Scoop out seeds and stringy pulp.
Place squash, cut side down, on baking sheet. Bake in preheated 350 F (180 C) oven for 45 to 50 minutes or until tender.
Meanwhile, in a large bowl, combine sugar, cinnamon, nutmeg, salt and pepper.
Scoop squash into bowl and mash with brown sugar mixture.
