Aubergine Caviar

1 Aubergine
1/2 teaspoon Salt
1/4 teaspoon Pepper
2 tablespoons Olive oil
2 tablespoons Lemon juice
2 tablespoons Finely chopped scallion
2 tablespoons Finely chopped parsley
1 Garlic clove finely chopped

Bake aubergine whole and unpeeled for 1 hour at 450 degrees. Peel. Place aubergine in a bowl. Chop or mash. Add all remaining ingredients. Mix well. Chill.
