Apple & Parsnip Soup

1 kg parsnips, peeled & cut into chunks
2 apples, cored & quartered
1 onion, diced
1.4 L chicken broth
2 ml salt

In a large pot; add parsnips, apples, onion, chicken broth and salt. Bring to boil. Reduce heat and simmer for 2 hours or until parsnips are tender. Let cool. Blend mixture in blender. Reheat and serve.
