Twice Baked Potatoes

4 large russet potatoes
125 ml milk 1/2 cup
1 ml salt 1/4 tsp
dash of pepper
250 ml cheddar cheese, shredded 1 cup
15 ml fresh chives, chopped 1 tbsp

Bake potatoes in 400 F (200 C) oven until soft. Cut potatoes lengthwise in half; scoop out inside, leaving a thin shell. Mash potato in medium bowl until no lumps remain. Add milk in small amounts, beating after each addition.

Add margarine, salt and pepper; beat vigorously until potato is light and fluffy. Stir in cheese and chives. Fill potato shells with mashed potato. Place on ungreased cookie sheet. Return to oven and bake about 20 minutes or until hot.
