Sausage and Cabbage Casserole

500 g sausage of your choice 1 lb
1 clove garlic, minced
1.5 L green cabbage, coarsely chopped 6 cup
500 ml tomato juice 2 cup
175 ml white or brown rice 3/4 cup
salt & pepper to taste
250 ml water 1 cup

In large saucepan, brown sausage over medium heat until lightly browned, turning as necessary. Add garlic and sauté for 1 minute. Stir in cabbage, tomato juice, rice, salt and water. Stir gently. Bring to a boil. Cover, reduce heat and simmer for 35 minutes or until rice is tender. Uncover and simmer a little longer to reduce any liquid in pan.
