3 pounds pork tenderloin, cubed
1 teaspoon salt
1/2 teaspoon pepper
1 onion, sliced
1/2 cup celery, chopped
1/4 pound mushrooms, sliced
1/4 cup butter
1/2 cup chicken stock
1 tablespoon all-purpose flour
Preheat oven to 325 degrees.
In a large skillet, over medium high heat, brown pork. Add onion, celery and mushrooms and simmer 5 minutes. Add salt and pepper. In a small bowl combine chicken stock and flour and whisk well.
Place tenderloin mixture in a baking and pour chicken stock mixture over. Cover and bake 1-1/2 hours.
