Corn Pepper Casserole

30 ml butter 2 tbsp
4 green onions, chopped
1 green pepper, chopped
1 red pepper, chopped
1 can corn kernels, drained (19 oz / 540 g)
15 ml cream 1 tbsp
salt & pepper to taste
125 ml cheddar cheese, grated 1/2 cup

In a skillet, melt butter. Add onion, pepper and corn kernels. Cook for 2 minutes. Remove from heat. Add cream. Season with salt and pepper.

Pour into shallow casserole dish. Sprinkle cheese over top. Cover and bake in preheated 350 F (180 C) oven for 15 minutes or until heated through.

Serves: 8
