1/2 cup bacardi gold rum
2 cups fresh orange juice
1/4 cup soy sauce
grated zest of two oranges
2 tablespoon chopped fresh mint
2 tablespoon chopped fresh cilantro
2 teaspoon minced garlic
1/2 teaspoon curry powder
1 chicken, cut up
Combine rum, orange juice, soy sauce, orange zest, mint, cilantro, garlic and curry in a shallow baking dish. Add chicken pieces, turning to coat. Grill over a medium hot fire, basting with marinade during the first 10 minutes of cooking.
