Yayeshnaya Z Horodynoyu (vegetable omelet)

4 MEDIUM SIZED PRE-BAKED POTATOES – PEELED AND DICED

250 GRM. RAW HAM SLICED INTO STRIPS (OR BACON)

200 GRM. COOKED GREEN BEANS

90 GRM. BUTTER

8 EGGS

SALT AND PEPPER

100 GRM. GRATED CHEESE

Mix the potatoes with the ham and beans and add 2 tablespoons of melted butter.

Whisk the eggs together and pour into the vegetables, mix thoroughly.

Season with salt and pepper.

Divide the mixture into 4 portions (or you could use a large pan and cook all together)

Fry the mixture in 1 tablespoon of butter turn over and cook the other side until cooked through and the egg is lightly set.

Sprinkle the cheese over the cooked omelets (or omelet) when cooked and serve hot.

This would make a substantial breakfast, or a light lunch on it’s own or with a salad.
