3 to 4 jalapeños or roasted and peeled fresh green chiles
1 large onion, diced
1 bell pepper, diced
2 tablespoon butter
1 dozen eggs
1 large tomato, diced
1 cup shredded cheddar cheese
Seed and chop jalapeños. In skillet, brown onion and bell pepper in butter. Remove from skillet. Beat eggs until frothy. Pour into skillet and cook until soft and very wet. Add all other ingredients and serve.
