Chili Fried Potatoes

1 kg potatoes, unpeeled & diced 2 lb
75 ml vegetable oil 1/3 cup
1 onion, chopped
1 jalapeno chilies, stemmed & cut into thin strips
salt

Heat oil in a large heavy frying pan. Add potatoes and stir to coat. Pat them into a flat layer and cook over medium heat for 10 minutes. Stir in onion, chili and pat into a flat layer again. Continue cooking until potatoes are brown on the bottom, about 5 minutes. Turn potatoes, raise heat to medium-high and cook until golden on the bottom, about 5 minutes more. Transfer to paper towels to drain. Salt lightly and serve immediately.
