Pepper Lime Chicken

1.4 kg chicken breasts 3 lb
5 ml lime peel, finely shredded 1 tsp
50 ml lime juice 1/4 cup
15 ml cooking oil 1 tbsp
2 garlic cloves, minced
5 ml dried thyme or basil, crushed 1 tsp
salt & pepper to taste

Broil chicken breasts, bone side up, on unheated rack of broiler pan. Broil 4 to 5 inches (10 to 12.5 cm) from heat for about 20 minutes or until light brown.

Meanwhile, in a small bowl, stir together lime peel, lime juice, oil, garlic, thyme, salt and pepper. Brush chicken with glaze. Turn chicken, brush with more glaze. Broil for 5 to 15 minutes longer or until chicken is no longer pink. Brush often with glaze during last 5 minutes of cooking time.
