1/2 of a large potato per person and 1 extra
butter
milk
sour cream,

grated cheddar cheese
cooked crisp bacon
finely chopped green onions or chives.
Bake as many potatoes as you need (I use 1/2 of a large potato per person, always baking 1 extra for anyone who wants more or if a potato is bad). After the potato has baked, make sure it has baked soft, cut the potatoes in half length wise. With a spoon, scoop out the pulp into a medium bowl, set the skins aside. To the pulp, add some butter and mash well. At this point, I start adding all the goodies: some milk to moisten the potato, a little sour cream, salt and pepper to taste and grated cheddar cheese. Maybe some cooked crisp bacon, finely chopped green onions or chives. Mix well and put back into the skins. Sprinkle some grated cheese over the filling and bake about 20 minutes or until heatened through and the cheese melts.
Other things that can be added would be some garlic powder, chili powder- really almost any seasoning you like. Lowry’s seasoned salt is good. I have also added crab meat and Gueyre cheese. Just try different combinations and have fun inventing new things.
