Mix
8 lbs hamburger
8 eggs, slightly beaten
4 cups bread crumbs
3-1/2 cups milk
3/4 cup minced parsley
3 tablespoons salt
1-1/2 teaspoons black pepper
2 quarts chopped onion
1 quart chopped green pepper
16 mashed garlic cloves
2-1/2 cups olive oil
Form into balls 1-1/4 inches in diameter. Sauté 2 quarts chopped onion, 1 quart chopped green pepper, and 16 mashed garlic cloves in 2-1/2 cups olive oil. Add meat balls and brown on all sides. Add :
5 quarts condensed tomato soup
5 quarts water
1 cup lemon juice
3 bay leaves
1/2 cup sugar
1 tablespoon salt
1 tablespoon basil
1 tablespoon sage
2 teaspoons thyme
2 teaspoons pepper
8 lbs spaghetti, cooked
Parmesan cheese
Simmer for 2 hours. Cook 8 lbs spaghetti in salted water according to directions on package. Combine 10 oz of sauce with each lb of cooked spaghetti. Sprinkle with Parmesan cheese.
