Pan Size: 18. by 24-inch Roasting Pan
Temperature: 400 degrees F. Griddle
100 steaks (44 lb) beef, boneless, grill steak, tempered
1-1/2 quart (3 lb 2 oz or 1-No. 3 cyl can) juice, pineapple, canned
1-1/2 quart soy sauce
3-1/2 quart water
3/4 cup (3 oz) ginger, ground
2 tablespoon garlic, dehydrated
4 tablespoon (1 oz) pepper, black
Arrange 25 steaks in each roasting pan. Combine ingredients. Pour 1-1/2 quart sauce over steaks in each pan. Cover; marinate for 2 hours. Turn steaks at end of first hour.
Drain. Grill steaks on each- side on greased griddle to desired degree of doneness: Rare-3 minutes; Medium-4-1/2 minutes; Well done-6 minutes.
