50 ml walnuts, chopped 1/4 cup
15 ml extra virgin olive oil 1 tbsp
15 ml butter 1 tbsp
1 medium zucchini, sliced
pinch of ground nutmeg
salt & pepper to taste
Heat large skillet over medium-high heat. Add walnuts and cook for 1 to 2 minutes, shaking pan frequently. Remove nuts to cool.
Add oil and butter. Add zucchini. Season with nutmeg, salt and pepper. Cook until tender, tossing occasionally, for about 6 to 7 minutes.
