250 ml all purpose flour 1 cup
250 ml whole wheat flour 1 cup
15 ml baking powder 3 tsp
2 ml cinnamon 1/2 tsp
1 ml allspice 1/4 tsp
2 ml salt 1/2 tsp
2 eggs
175 ml milk 3/4 cup
75 ml oil 1/3 cup
125 ml liquid honey 1/2 cup
250 ml zucchini, grated 1 cup
150 ml raisins 2/3 cup
grated rind of 1 lemon
In a large bowl; stir together flours, baking powder, cinnamon, allspice and salt. In a small bowl; beat together eggs, milk, oil and honey. Add to dry ingredients. Stir until mixture is just barely moistened. Stir in zucchini, raisins and lemon rind. Spoon into paper lined muffin pans. Bake in preheated 375 F (190 C) oven for 20 to 25 minutes or until they test done.
