500 g ground beef 1 lb
2 large white onions, chopped
2 large cloves garlic, minced
25 ml chili powder 2 tbsp
5 ml cumin 1 tsp
5 ml dried oregano leaves 1/2 tsp
5 ml jalapeno pepper, finely diced 1 tsp
3 large tomatoes, skins removed & diced
175 ml tomato juice 3/4 cup
2 cans red kidney beans
500 ml corn 2 cup
In large saucepan, cook beef until brown; drain fat. Add onions, garlic, chili powder, cumin, oregano and jalapeno pepper. Cook until onions are tender. Stir in tomatoes, tomato juice, kidney beans and corn. Simmer 20 to 30 minutes.
