Tomato and Red Onion Compote

25 ml olive oil 2 tbsp
275 ml tomatoes, chopped 1 1/2 cup
75 ml red onion, chopped 1/3 cup
45 ml fresh basil, chopped 3 tbsp

Heat oil in large skillet over medium heat. Add remaining ingredients and sauté just until heated through, about 2 minutes. Season with salt and pepper. Serve with grilled chicken or beef.
