Dutch Apple Bake for 100

Servings: 100 Portions (3 Pans)
Portions: 3/4 Cup Each
Pan Size: 12 by 20-inch Steam Table Pan
Temperature: 325 degrees F. Oven

2-1/4 gallon (20 lb 4 oz or 3-No. 10 can) applesauce, canned
3 3/4 cups (1 lb 4 oz) bread crumbs, dry, toasted
28 egg yolks, beaten
3 cups (1 lb 4 oz) shortening, melted
2 tablespoon cinnamon, ground
2-1/2 cups (1 lb 1-1/2 oz) sugar, granulated
28 egg whites
1 quart (1 lb 12 oz) sugar, granulated
2 tablespoon vanilla

Combine applesauce, bread crumbs, egg yolks, shortening, cinnamon and 2-1/2 cups sugar;
mix well. Spread 1 gallon in each pan. Bake 45 minutes. Remove from oven. Beat egg whites;
add 1 quart sugar gradually. beating to a thick meringue. Add vanilla. Spread about 2 1/2
quart meringue over applesauce in each pan. Return to oven for 15 minutes or until meringue
is lightly browned.
