2 yellow onions, cut into eighths
1 red onion, cut into eighths
2 leeks, washed, trimmed & sliced
4 garlic cloves
25 ml olive oil 2 tbsp
15 ml fresh rosemary, chopped 1 tbsp
2 ml salt 1/2 tsp
1 ml black pepper 1/4 tsp
Place onions and leeks on large piece of aluminum foil. Brush with oil and sprinkle with seasonings. Close foil securely. Bake in oven at 400 F (200 C) for 20 to 25 minutes or until onions are tender.
