500 g small potatoes, unpeeled & diced 1 lb
2 carrots, thinly sliced
30 ml olive oil 2 tbsp
1 onion, finely chopped
2 garlic cloves, finely chopped
225 g cooked beef, cut into bite size pieces 1/2 lb
1 can corn kernels, drained (10 oz / 284 ml)
salt & pepper to taste
In a saucepan of boiling water; cook potatoes for about 8 minutes. Add carrots and cook for a further 2 minutes. Drain well.
In a large skillet; heat oil. Add onion and saute over medium heat for about 3 minutes. Add garlic and saute for another 2 minutes. Add drained potatoes and carrots. Season with salt and pepper. Fry for about 10 minutes, stirring constantly.
Add beef and corn. Heat through for another 5 minutes, stirring occasionally.
