4 oz Oregon blue cheese
1 cup buttermilk
1/2 teaspoon dry mustard
1 teaspoon black coarse pepper
1 teaspoon Worcestershire sauce
1 clove minced garlic
1 teaspoon kosher salt
1-1/2 tablespoon lemon juice
1-1/2 cups mayonnaise
Place all ingredients in a bowl. Stir together with an electric mixer set on low speed to prevent splashing. Mix until well blended. Don’t overmix. Refrigerate overnight. This must sit 24 hours before serving.
