1/4 cup fresh lime juice
1 tablespoon peanut oil
2 tablespoons coriander, fresh chopped
1 teaspoon sesame oil
1/2 teaspoon sambal oelek or similar
1/2 teaspoon grated ginger root
1 pinch salt and freshly ground pepper to taste
Combine all ingredients in screw top jar and shake vigorously. Serve over hot steamed asparagus, green beans and zucchini. Serve over cold: mushrooms, shallots and bell peppers/capsicums.
Makes 6 servings.
