Garden Salsa

1 Lime
1-1/2 lbs. tomatoes
1 small red onion
1 small jalapeño chile
2 TBSP fresh cilantro
3/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper

Grate 1/2 teaspoon and squeeze 1 TBSP juice from lime. In medium bowl, mix lime peel; lime juice; 1-1/2 lbs. tomatoes, diced; 1 small jalapeño chile, seeded and finely diced; 2 TBSP fresh cilantro, chopped; 3/4 teaspoon salt; and 1/4 teaspoon coarsely ground black pepper. Serve with tortilla chips.

Makes 3 CUPS.
