Apple Chipotle Salsa

2 cups apples (golden delicious or granny smiths) unpeeled, cored, seeded and chopped into 1/2 inch pieces. (sounds large but it works well)
2 tablespoon lime juice
2 chipotles (if dried, soak in hot water for 1/2 hour, then seed and chop fine)
2 green peppers, seeded and chopped
2 tablespoon finely chopped red onion
2 small garlic cloves finely chopped
1 tablespoon cider or balsamic vinegar
1 tablespoon olive oil
2 or 3 tablespoon chopped, fresh cilantro

Toss together and serve with very fresh tortilla chips. Also excellent with poached white fish and chicken.
