3 med. raw beetroot
2 stalks celery, diced
3 spring onions, chopped
1 tablespoon sugar
1/2 cup cider or white wine vinegar
1/2 cup mild flavoured oil
1/2 cup chopped parsley
Wash beetroot and peel, Grate coarsely, mix with celery and onion. Stir vinegar and sugar until dissolved. Shake with oil. Sprinkle through beetroot until well-coated in dressing. Toss with parsley.
Salad may be topped with yoghurt or sour cream.
